Are your 7800 cards 256 MB or 512 MB? The 7950GX2 has 512 MB for each GPU,
or 1 GB total. This makes a substantial improvement at ultra-high
resolutions such as 2048x1536 4x AA. At lower resolutions you just won't see
a difference.

The 256 MB 7800GTX is about as fast as the 7900GT, from what I remember.

Not just resolution, but some games like Oblivion require vast texture
memory. Some of the Oblivion landscape mods push the video memory
limit over 256Meg, with consequent memory thrashing by having to
reload textures --- in SLI the memory accesses ping-pong between cards
so the application only sees a memory size equivalent to that on one
card. In the case of dual 7800GTX(256) in SLI, the memory seen
is still only 256Meg.
