Dual View Problem
I appreciate few people actually run a 2 monitor setup, but if you do

The only way I've found to do it is to select "Horizontal Stretching" and
then change your resolution to 2048x768. It will however make both of your monitors appear as one very wide monitor so that may not be exactly what you want. It does stretch the Start Bar across both monitors though (along with your wallpaper). You are right, this is exactly what I don't want I run each at 1280x1024 then 'tile' a bitmap that is 2560x1024. This also means I can maximise applications on either monitor, which is the method I am most comfortable with. I still can't believe the removed the tick box from the dual view settings. Monster task bar makes my life much easy.
