Default Dual monitor output restricts me to 16-bit colour

I have a shuttle system with a motherboard with the nforce2 chipset. It
has 2 VGA outputs and I finally got around to buying a second monitor
today. My problem is that with them hooked up and set to reasonable
resolutions (one is 1152x864 and the other 1280x1024) both can only use
16-bit colour. If I switched them down to 800x600 I could go to 32-bit
colour but then I would prefer to go back to one monitor than do that!

I have the latest forceware drivers installed and I changed the frame
buffer size in the bios from its initial 32MB up to 128MB with no
difference. I also upped the AGP aperture size (although from my
understanding this would make no difference)

Is there any way I can get 32-bit colour at decent resolutions with 2
displays connected?

Sounds like you haven't got enough video memory.
If you are using the onboard video, you can raise the amount of memory
assigned to the video card in your system BIOS setup screen.
If you are using a video card, with 2 video outputs, then as long as you
have a minimum of 64 meg of RAM, ~I can only think it may be a driver
problem. Try updating to the latest drivers.
