8 Drive Raid 10 vs 3 separate Raid Arrays

Default 8 Drive Raid 10 vs 3 separate Raid Arrays

I am going to put together a dedicated SQL Server and was wondering if
I would be better of with having one 8 drive raid 10 array which would
include the os, database, and transaction logs or the following
configuration:

OS: Raid 1
Database: Raid 10
Transaction Logs: Raid 1

The controller will be an Adaptec 39320A-R
and the drives will all be Maxtor 18GB 10K U320.

Any help is appreciated.
