By having 2 x 7800GTX in SLI mode, does that double my texture memory. Both
cards have 256Mb on them.

Nope. Both cards need to store the same data about the scene being rendered.

Nope, as NoRemorse pointed out. This is actually a good thing. Having
redundant data feeding each card doubles the effective memory bandwidth,
which helps performance. On the other hand, 512 MB of "unique" texture
memory doesn't do a damn thing for even the most demanding games.
